The DIY book scanners have figured out many ways to trigger simultaneous

The Canon Camera software is called CHDK, and it is a non-damaging firmware
modification that runs from an SD card.
There are many other ideas here, from servo motors pushing triggers to wiring
to the cameras. Some of them may be of interest to you.
