That's not a proper value for the MAILHOST variable. It should be
_just_ the hostname you wish to appear in the emails, presumably
"arcormail.de". To set your personal name, you're supposed to set the
MAILNAME environment variable (or QMAILNAME, or NAME).
For more information, look at the man page for qmail-inject. It
describes all the relevant environment variables in the typical qmail
manner (brief but accurate and complete).

I'm not sure but I suspect these might be caused by settings in the
QMAILINJECT environment variable -- do you have that set? By default,
qmail-inject (and thus, the sendmail wrapper) does not touch the From:
header. It will also by default remove the Return-Path header but use
the contents for the envelope sender. If you do have QMAILINJECT set,
refer to the manual page again... Usually it doesn't need to be set,
the defaults are good for most circumstances, so my first suggestion
would be to unset it.
The qmail list might be more appropriate, but perhaps others are
struggling with the same problems as you are to get qmail play ball
with Mutt, so I don't consider answering here too far off-topic...
