By the way a MUC could decide to don't respect the choice of the user and notify him (caps?) that his JID will be shown/hidden.

I'm sure there are few situations where it could be good that the MUC has this power. But in most of the cases I think let the user decide what to show or not is the good way. Specially because MUC adminstrator(s) don't want to decide for them.

If the user don't specify if he want to show his real JID or not, the
MUC will decide (depends on the MUC configuration) for him which
ensures "compatibility" with MUC/server which doesn't implements this.
