Apparently the font you are using does not have the Maltese letters. You have to choose a font which includes these letters. Most applications have a settings window which allows you to select the font. Only a few of the "default" fonts in Linux include Maltese letters, but you can tell Linux to install Windows' fonts if you have a dual-boot system. If you're using Mandrake, it has a tool which allows you to install fonts easily (from the Mandrake Control Centre).
