Realistically speaking, any protocol can be encapsulated within any other
protocol. This is how we get ATAPI, which is SCSI encapsulated within IDE,
SCSI over USB or FireWire, TCP/IP within TCP/IP (is how virtual private
networks are created), etc. There is no reason why an S/P-DIF or PCM
signal could not be encapsulated and transmitted over USB or FireWire.
