Ah ok, that looks promising. Sorry, I did Google around a fair bit but I guess I was using the wrong keywords...

Does anyone know if there's a way to do this, or whereabouts in the code I should start looking?

Search for '\t' in Mailman/Handlers/CookHeaders.py. Some (most)
occurrences can be replaced with ' '.

I think the only one that can't be changed is

    if len(lines) > 1 and lines[1] and lines[1][0] in ' \t':
        ws = lines[1][0]
