If this is your only digested mailing list, you could just change the cron entry for the cron/senddigests task. By default, it generates the periodic digests at noon daily. You could set it for your given day of the week.
If you have additional digested mailing lists that still need to have daily periodic (not just thresholded) mailings, you will have to get more clever and have multiple crontab entries that use the --listname=mylist switch on senddigests to specify which digests are processed at which times/days.
