For Icons Check: /usr/share/icons/hicolor/scalable/hildon or /usr/share/icons/hicolor/48x48/hildon
Also, when you do a dpkg -l you can find the files for the package in /var/lib/dpkg/info For each package, you can check the <pkg>.list file to see what files it has For applications on the desktop, I believe you should look for /usr/share/applications/hildon/... In that file you should find the name of the icon being used. Hope this helps.
