The G3 (presumably a Beige) will definitely not do auto-recognition for ethernet. I'm also not sure if the eMac will! (this used to be a feature of the high-end laptops/desktops. Did it make its way onto desktops?)

If you have firewire that is by far the fastest method wihout taking the eMac apart and puttting its Drive into the G3 (I'm assuming the G3 is a PowerMac). Get a 6pin to 6 pin firewire cable. Shutdown the G3. Attach the machines. And then boot the G3 with the T key held down. It will now look like an external drive to the eMac.
The G3 will not do anything with FireWire target mode. The G4 towers were the first machines to have FW target mode and I don't know if the eMacs do (I imagine they would).

Well, the G3 won't itself start up in target disk mode, but the eMac will. If the G3 has Firewire, you can mount the eMac as the target disk and use the G3 as the host, I do that with an old Power Center running OS 9.2.2 and new iBook running OS X.3.2 (the iBook is in target disk mode). You will then get the eMac showing up on the G3 desktop and you can transfer the files that way....very slick. I only shutdown the iBook and restart in TD mode, the Power Center stays running, as Firewire is hot-pluggable, although you can shut them both down if you're paranoid.
