Does anybody know where I can find figures on the number of 'phones in
Australia that don't have a physical land-line?...
Some of the radio 'phone towers seem to have been around so long that at least one could be heritage listed! :)

The old HCRC network apparently provided "approximately 17,000 individual services to 9000 customers" in 2012.

An old research paper puts the number on DRCS (which preceded HCRC) in 1987 at about 10,000.

It looks like current figures might be "Commercial in Confidence", but an unnamed source says about 27,000 on Telstra's proprietary NGWL.

So, steadily-rising numbers relying on infrastructure so old that at least some of it qualifies for Heritage Listing. :/
