I tested from a new file, and it's true that unsharing an XLSX results in a
file that still behaves like a shared file: not able to merge cells, and
changes are tracked for some reason (when that functionality is not available
in a shared ODS). But no "(shared)" in the title bar.

Ultimately I think this is the same as bug 100433, in which saving a shared
XLSX results in the user being told it is not shared anymore,
