Here is what I just tried changing from the defaults and what happened:

1) LibreOffice > Preferences > LibreOffice > Accessibility > High Contrast: >
from:
Automatic

to either:
Disable
Enable

Still white text on white background. For Enable, it did change other colors
within the GUI.

2) LibreOffice > Preferences > LibreOffice > Application Colors > Scheme: >
from:
LibreOffice

to:
LibreOffice Dark

Still white text on white background. Other colors changed within the GUI.

3) System Settings > Appearance > under Appearance change from:
Dark

to:
Light

This changed it to black text with white background with the default (i.e. as
it came installed) LO settings.

Hence, I think it's reasonable to adjust how LO defaults colors to control for
if the user changes the appearance to either Light or Dark in System Settings.
