Sounds like you are applying Direct Formatting...
Have you tried clearing Direct Formatting and then applying the font change via
a Style? Or idealy, defining a new style from the 'Cell' default (Sidebar ->
Styles -> Default and the 'Modify' context menu). Clear the Direct Formatting,
then select and apply the modified new Style.
Multiple modified Styles can be applied where needed on the sheets.
