The "created" info in the document's properties refers to the initial creation of the document (at least that is what I assume). This is not necessarily related to the file, which makes sense, since those are two different things. I often make a copy of a file and then edit the new copy. On the next save, the date at which I copied the file is lost because the creation date of the copy is changed.
