Interface follows os/DE color scheme. Please read the release notes for 25.2 Tools -> Options -> Appearance theme replaced Personalization. Users are expected to install an Appearance theme "extension". To restore < 24.8 UI, for Windows builds you should install the 'Light Application Color' theme extension for use in Windows 'Dark' mode, or if in Windows 'Light' mode the 'Lime' or the 25.2 version of 'Office 2003' appearance theme. Then select it from the list box, OK, and restart LibreOffice.
