Always question when users claim to have reset profile. And here, with OPs
installation of Galaxy icon theme, the installation is also in question.

My suggestion to OP and others would be to uninstall LibreOffice (not a
repair), then delete the per-user LibreOffice profile directory (default on Win
at "C:\Users\<userName>\AppData\Roaming\LibreOffice" user and any other
accounts).

Then reinstall clean, allow default profile to build.

The defaults at 25.2.3 should correctly handle os/DE light/dark color theme
choice. But will still have nuisance of Dark document canvas with dark color
theme.

So would still have to use the Tools -> Options -> Appearance panel and install
the 'Light Applications Colors' extension theme, and then apply it from the
list box to get light canvas of 24.8 and earlier.

Additionally there is the Automatic theme behavior and its interaction with the
theme mode of System/Light/Dark. Once an appearance theme extension is
installed and enabled, the Automatic theme stops correctly responding to os/DE
color theme selection. And can end up with dark icon and text on dark
application color.

Applying and staying with an appearance theme works. Staying on the Automatic
theme and using the System/Light/Dark works. But moving between those can end
in a state with dark on dark or light on light--requiring a profile deletion to
clear.  

At 25.8 we've added checkbox toggle for the document background and removed the
System/Light/Dark choice.  The Automatic theme will follow the os/DE color
theme. And the appearance theme extensions will more cleanly assert when
selected and roll back to Automatic and os/DE theme defaults. Restart to fully
assert UI appearance should be less often.
