Open Tools -> Options -> Appearance and download/install one or all of the
Appearance themes new at 25.2

Then select one: the Lime Theme, or Light Application Color theme, or one of
the other themes now being posted. 

LibreOffice will restart and reopen with the new Appearance theme framework
populated, you'll be able to toggle the appearance mode between System color
theme, Light, or Dark.

One of those should work for you "out of the box" as you toggle appearance. Or
you can make color changes to UI elements listed in the Customizations box,
e.g. Document Background, Application Background, Font Color, etc. to meet your
preferences.

Unfortunately the default "Automatic" appearance theme does not at 25.2 release
allow to modify the theme. That has been added for the 25.8 release.
