Having a configuration setting to hide the Payee field from the UI is certainly possible, but I suspect the required programming changes would be rather extensive, although that decision would be up to any developer who chooses to work on this. Although Payees often include transactions in a single category, that is not always the case, and simply including the Payee as part of the Memo would make reporting quite difficult. As an example, I might buy things from Amazon or eBay which are food, clothing, electronics, reading, entertainment, ...., and I do want to easily know how much I am spending at each site.
