I have experimented with updating to 2.0.31 which supports both EFI_ZBOOT with zstd as well as a UKI or stubble style PE binary with .linux section, test build is available at https://launchpad.net/~tobhe/+archive/ubuntu/hamoa/
This works fine on my machines as long as SB is disabled.
