Is there a way to just disable HDMI? Or lock the configuration? All I'm asking for is for Ubuntu to not mess with the settings that already work.

The volume would always be set to 100% after booting, though I couldn't hear anything. I went to the audio settings, and discovered that the hardware profile was set to "Digital Stereo (HDMI) Output". Changing it to "Analog Stereo Output" fixed the problem.
