I'm sure of that because I use HDMI every day, at work or at home. And I
checked my apt/Synaptic's history. Nothing else was updated this day
apart kernels. I updated GS and Mutter to 3.36.9 *way after* having
experienced the issue for the first time.

And kernel 5.8 hwe is working nicely with HDMI...

Please note that I did have some partially similar issues with 5.10 oem
with my Dell WD15 dock (2 displays) at work: after unplugging the usb-c,
I have to force the shutdown and sleep is broken. I absolutely don't
know if this is related to this bug here.

Bug description:
  [Impact]
  On Intel CML desktop, there's no HDMI output when the cable is not
  connected pre-boot.

  [Fix]
  Properly handle lane polarity so the driver can write different values
  to the register to enable the port.

  [Test]
  1. Boot with DP display.
  2. Connect HDMI under GNOME desktop.
  3. No picture on HDMI monitor.
  With the fix applied, the issue is resolved.

  [Where problems could occur]
  If the BIOS VBT table is not correct, which did happen in the pase, this
  fix may break those ports.
