While installing ZFS may not be something to be done through the installer allowing an (advanced) user the option to pop to a console and configure ZFS nonetheless seems like a good idea (for example as it will allow installing root on ZFS, see e.g. https://github.com/zfsonlinux/pkg-zfs/wiki/HOWTO-install- Ubuntu-16.04-to-a-Native-ZFS-Root-Filesystem). Currently I do see a btrfs-tools udeb package in /pool/main on the iso, but no zfs-utils package. As a side note, the zfs kernel module is included in the iso (see https://bugs.launchpad.net/ubuntu/xenial/+source/linux/+bug/1509881), so running modprobe zfs works, a parted udeb is available, so we're more than halfway there ;-).
