I've bisected this down and the upstream commit 2c21b4d733d6e50514e30ffd87110364ddda695b "Btrfs: fix transaction abortion when remounting btrfs from RW to RO" fixes this, allowing me to run the tests through to completion multiple times. Without this fix, the tests always reboot on the first iteration using the autodefrag mount option.
