I understand what you are trying to achieve, but I don't know how you are
exactly editing the .desktop file. Could you take a screenshot of the dialogue
box so I know where to look?
As for your question regarding documentation for configuration options, I would
ask on the forums (https://discuss.kde.org) and hopefully someone there knows
where to look.
