At least for me, during night time the grayscale effect reduces eye strains,
such that on disabling it I get a similar feeling as if Night Color was
disabled. So I would say It's clearly more than just making device annoying to
use (otherwise the Bedtime mode on Android would be just a utterly huge overlay
that says "You need to sleep now" that pops up every single minute).

There's a semi-broken third-party effect on kde store:
https://store.kde.org/p/1263836/ the grayscale part still works. You may try
working on you screen with this effect enabled during night time, and then just
before going to sleep, disable this effect to see the difference.
