Not following the Breze GTK theme is probably because they're either flatpak
apps, or using GTK4 with libadwaita, both of which don't work properly with
3rd-party themes.
However that is not related to the issue with text, which could possibly be a
KWin issue. I've seen this in the past, but it's not 100% reproducible for me.
