You can open the activity switcher, and click on the 'Configure' button for an activity. The shortcut setting is on the 'Other' tab. Now, there is some issue with the activity shortcuts in Plasma 5.7, and that one is the next item on my TODO list. As for Alt+H and related shortcuts, there is no relation between the issue with activity shortcuts, and these. It is a separate issue, and I'd say it is a setup issue.
