It’s not used because it’s a good representation of the way the Earth actually looks. For example, in EPSG:3857 Greenland looks to be about the same size as Africa. In reality, Africa has an area that is about 14 times (!) that of Greenland. That said EPSG:3857 doesn’t look *too* bad when used for ‘local’ (large scale) maps, especially for countries that are not too tall and not too far from the equator.
