I agree with you that a lot of people use Dolpgin as a kind of quick-and-dirty backup program anyway, dragging-and-dropping a folder with there data onto an external disk. My wife does this, in fact. And indeed, it works fine except for one thing: the lack of an option to delete files in the destination that aren't in the source: a "synchronize" option.
