To set the field name, you can just type into the "Select the frame ID" combo box of the "Add Frame" dialog, it is editable. Once the frame type is set in the "Add Frame" dialog, it cannot be changed later, because it is not possible to convert every ID3v2 frame into another ID3v2 frame. So you would have to add a new frame if you need another field name.
