I'm not really sure if Dolphin uses the same system, but can you open the
folder with the pdfs in Dolphin activating file preview? You should be able to
see the first page.
Whether it works or not, you could uninstall and reinstall Okular, or downgrade
and upgrade again too see if this solves the problem.
