You can already make the icons huge" right-click on the desktop > Configure
Desktop > Icons > Increase "Size" to the highest value.
You can also get more room for titles by increasing "Text Lines" on that page
to a higher number.
The text is changed systemwide in System Settings > Fonts; if you want larger
text on your desktop icons, it's a good bet that it's because you have bad
eyesight or just prefer large text, so it makes sense to change that
everywhere.
I do agree that the grid spacing should be customizable. That's tracked in Bug
403094
