That's what our categories file looks like:
<Menu>
<Name>Education</Name>
<Icon>applications-education</Icon>
<Include>
<And>
<Category>Education</Category>
<Not>
<Category>Science</Category>
</Not>
</And>
</Include>
</Menu>
We can decide to drop the "Not Science" part, I'm guessing it was done so that
Education doesn't get too crowded with "grown-ups" stuff by having a whole
Science category.
