The ui is there actuallyto redefine the page style
go into the page layout dialog by going to the "page layout" tab/mode and press
the page layout button
You can even apply it to different parts of the document - just create a page
break - have more than one page layout style and use it on either side of the
page break.
I wlll give you though that the ui is not the best and has been scheduled for
rework for a long time - in any case thise kind of larger improvements are not
being tracked in the bugzilla so i am closing your report
