For the other issue you mentioned with launching previous versions of KStars, I would bet that has something to do with your data directory ~/Library/Application Support/kstars or your preferences file ~/Library/Preferences/kstarsrc I don't know if anything changed with any of the data files or preferences in 3.7.8, but those are the files that would be most likely to affect another KStars.
