I have the same problem, but it seems there's a workaround. I got the dates
back in the message lists by going to Settings/Appearance/Message List and
selecting a different format in "Date Display". It was "Smart Format" and dates
came back once I selected "Localized Format" instead and hit Apply.
Intriguingly going back to "Smart Format" actually kept the dates. This
suggests that it might be an upgrade issue.

For the Message view itself it seems like setting a different theme in
View/Headers does the trick. Fancy Headers is broken, but Standard Headers and
KMail Enhanced Dark do display the date.
