I wish the Brightness and Color widget had an option to edit the percentage of
each step, just like you can with Audio Volume.

I've checked, and this isn't some weird limitation of how brightness is
changed. You can use values outside the 5% step range by utilizing  `screen
brightness 62` on Krunner
