Long story short -- I did some further testing and figured out that my
dolphinrc file (~/.config/dolphinrc) was causing the problem. As soon as I
deleted it and restarted dolphin, the 'Show Previews' setting began working as
expected. I also deleted ~/.local/share/dolphin/view_properties just in case.
