The monochrome style is intentional in Plasma 6.2; the bug here is that the
icon theme you're using is missing some monochrome icons (and also apparently
its monochrome icons aren't color-changing correctly). I'm afraid there's no
way around this due to the way icon themes work. You'll need to report this to
the authors of the icon themes you're using and ask them to fix the
color-changing-ness of their monochrome icons and add some more.
