I kept `usePaimon()` in `PolarisCatalogUtils` to remain consistent with the
existing `useDelta()` and `useHudi()` methods. Moving these methods into their
respective helpers could be a good follow-up refactor, but I preferred to keep
this PR focused on the current scope.
