Add Table.ComputeNDVs, which scans a snapshot and builds a DataSketches Theta sketch per top-level primitive column, returning the estimated number of distinct values and the serialized sketch keyed by field ID. Values are hashed using Iceberg single-value serialization, matching the encoding other implementations use, so estimates are comparable. Nulls are skipped and nested columns are ignored.
