Backport of #17900 to Flink 2.2, as requested by @mxm. The change applied cleanly from `flink/v2.3` to `flink/v2.2` with no modifications. Flink 1.20 is not included since it has no Variant type, and `v2.1` is no longer on `main`. Testing: `spotlessCheck` and the `org.apache.iceberg.flink.sink.dynamic.*` tests pass locally on Flink 2.2 (304 tests, 0 failures). -- This is an automated message from the Apache Git Service.
