pyiceberg/utils/parsing.py was the only module under pyiceberg/utils without
a dedicated test. ParseNumberFromBrackets backs parsing of bucket[N],
truncate[N] and fixed[L], so cover its match behaviour and the ValidationError
raised on malformed input.
