   I investigated this and seems like it is not supported.  First I wrote a 
test to understand the behavior

   The code here clearly mentions any map key update is not allowed

   And finally I found this in the spec as well 
https://github.com/apache/iceberg/blob/main/docs/docs/evolution.md?plain=1#L39
   
   FWIU, the reason it is not allowed is, if you get to update the the nested 
key, the equality between the new and old data breaks and they can't be 
compared. You can drop the whole map column though and nested values which make 
sense to me now.
