On reflection, I agree that if we do build and publish multiple versions of iceberg-hive-metastore based on Hive version, that it makes sense to remove the iceberg-hive-metastore classes from the runtime JARs, and that users would then need to add the version of iceberg-hive-metastore they want to use with the engine.
