Are you using the databricks/former tabular kafka connect plugin or the iceberg kafka connect plugin? It looks like the databricks kafka connect plugin was contributed to iceberg here: https://github.com/apache/iceberg/pull/9466 That said `iceberg.tables.upsert-mode-enabled` only appears in the databricks plugin not in the iceberg plugin.
