Thanks for this PR! Looking forward to `table-override` being supported for REST catalogs too. @ebyhr / @nastra - think I noticed a tiny bug (https://github.com/apache/iceberg/issues/12525) - I believe we should change the other terminal methods of the REST table builder to also use `buildKeepingLast`.
