Worth mentioninig that this issue started to happen after we upgraded the AWS SDK to 2.30.0, which added changes to the default integrity protection (see https://github.com/aws/aws-sdk-java-v2/discussions/5802 and thus negatively affects S3-compliant object storage solutions. After reverting the AWS SDK for 1.8.x in https://github.com/apache/iceberg/pull/12339 the issue was fixed.
