Modifying guacamole-server/src/protocols/telnet/client.c, line 78, then recompiling/building docker, can fix this. This feature request is to extend that property, and perhaps others, to the guacamole server to set when the connection is initialized, if at all possible. A checkbox to start the session with echo_enabled set to 1 or 0, for example.
