There is nothing application-specific nor OS-specific about Guacamole's handling of copy/paste - that much depends on the remote desktop server accepting and handling the data it receives from Guacamole. If you're seeing variance in behavior that differs based on the type of applications or the OS being accessed, that variance cannot be caused by Guacamole. It's possible that the browser you're using simply doesn't support full asynchronous clipboard access, but that also is outside Guacamole's control.
